Meats of choice are chicharrones (fried pork belly), slow-cooked half chicken on the barbecue or Papas Nativas (potato chips), pork loin ribs, thick steaks ... all accompanied by homemade sauces, onion strips and spicy coleslaw, french fries or plantain chunks, corn on the cob....
Good grilled meats are above all cooked and seasoned in such a way as not to mask the taste but to sublimate the flesh, the fat and the cooking juice.
