These are the leaves of a tree from the Myrtaceae family which grows in the rainforests of Australia and Tasmania, they are dried and reduced into powder. The Australian aborigines use it as a powerful tonic and also in their cuisine for its exceptional aromas.
The strong lemony side to this powder naturally allies it with sea food, shellfish, crustaceans, fish... but it can also be used on white meats: veal, chicken supreme... and also in desserts: fruit salad, ice-creams, sorbets etc.
