Phu Quoc white pepper
Piper nigrum L.
This pepper is harvested on the island of Phu Quoc, the most northerly island in Vietnam. Its exceptional freshness makes it perfect for sea food, fish, crustaceans, shellfish and in particular oysters, but also on all vegetables, pasta, rice and white meat and poultry. It would be outstanding on seared foie gras with mango and fresh goats' cheese accompanied by persimmon or a not-too-ripe mango.
