This is black pepper cracked in a coarse mill to be used in pasta, cold cuts, pickles and of course for the famous steak au poivre.

For our "mignonette" crushed pepper, we chose to use black pepper (Piper nigrum) from the Tamatave region.
The picking, washing and sorting of these grains are entirely done by hand.
We only use large whole grains of the same quality as the whole black pepper that we offer.
Crushing involves breaking the grains coarsely, allowing all the aromas of the berry to be quickly enhanced. In this form, it will be used in all your preparations, for sauces as well as for coatings.
