Isfahan rosebuds

 

The Isfahan rose, or the “Pompon des Princes”, is often called the Damask rose. The province of Isfahan has preserved its culture since the 16th century.

This rose is found everywhere in Iranian cuisine, in pastries, cooking, sweets, ice cream, drinks.

In sweet dishes, its buds are delightful with strawberries, lychee, fruit salads, chantilly and whipped cream or macaroons.
In savoury dishes they bring out the flavour of tomatoes, rice, pasta, butter, not forgetting cold, icy or hot herbal teas, or cream and ganache flavourings.
