It is very rare to find whole flowers on the market which are freshly picked with rich pigments, intense flavours, without oxidation or external odours. They are delicately cooked to preserve the colour, crunchiness and acidity of the hibiscus flower chalices.
The flowers are delicious in a glass of Champagne or any sparkling dry white wine, or to decorate and use in delicious cocktails.
Ice cream makers can make sorbets, ice creams or granitas with the syrup and the finely chopped flowers as decorations.
Pastry and chocolate makers can use them to bring an exquisite touch to tartlets, cream cakes, ganaches and other delicious sweets.
In cooking, they can also be used in savoury dishes, in patés and terrines, foie gras escalopes, duck breast, game, white fish, pickles or oysters.
